Mine is similar to this one, except I don't use bottled dressing. Instead I just mix up a quick vinaigrette with what I have on hand. Usually 4 TBS vinegar, 2 TBS sugar, 2 TBS oil. It's good with cucumbers in it too.
This is standard Sunday lunch fare. I've been making it for years. You can substitute fat free cream of chicken and 1/3 less fat cream cheese to make it a little healthier. You can also put the chicken breasts in frozen and they will cook up just fine (takes longer). **NOTE: The link recipe calls for cooking the chicken in water 3 hours, then adding cream cheese and soup. I don't do this. I just put everything in the crockpot and cook on low 4 hours. DONE! (If the breasts are frozen it will take 6+ hours on low). Before serving, I shred the chicken up and stir well with sauce to combine.
